Curried Coconut Chicken Recipe

Ingredients
  • 1 tsp salt & pepper, or to taste
  • 1 (8 oz) can tomato sauce
  • 2 cloves garlic, crushed
  • 2 tbsps curry powder
  • 1 (14.5 oz) can stewed, sliced tomatoes
  • 2 lbs boneless skinless chicken breasts, cut into 1/2-inch chunks
  • 3 tbsps sugar
  • 1 1/2 tbsps vegetable oil
  • 1 (14 oz) can coconut milk
  • 1/2 onion, thinly sliced

Directions
  • Step #1 Spice up chicken pieces with salt & pepper.
  • Step #2 Heat oil & curry powder in a large skillet over medium-high heat for two mins.
  • Step #3 Stir in onions & garlic, & cook 1 min more.
  • Step #4 Add chicken, tossing lightly to coat with curry oil.
  • Step #5 Reduce heat to medium, & cook for 7 to 10 mins, or until chicken is no longer pink in center & juices run clear.
  • Step #6 Pour coconut milk, & sugar into the pan, tomatoes, tomato sauce, & stir this to mix.
  • Step #7 Cover & let simmer, stirring every once in awhile, approximately 30 to 40 mins.
