Ingredients
Glaze:
1/2 tsp almond extract
1/8 tsp salt
Cake:
1 tsp vanilla extract
1/2 c low-fat buttermilk
1/4 tsp vanilla extract
2 tbsps sliced almonds
1/2 tsp baking soda
1 large egg
1/4 c sifted powdered sugar
1 1/2 c thinly sliced peeled Granny Smith apple
1 tbsp lemon juice
3 tbsps brown sugar
1 tsp low-fat buttermilk
1/3 c granulated sugar
2 tbsps butter, softened
1 c all-purpose flour
Cooking spray
1/2 tsp ground cinnamon
Directions
Step #1 Preheat oven to 350°.
Step #2 To prepare the cake, mix the first 4 ingredients in a small saucepan over medium-high heat.
Step #3 Cook 5 mins or until syrupy, stirring frequently; cool.
Step #4 Lightly spoon flour into a dry measuring c; level with a knife.
Step #5 Combine flour, & salt in a small bowl, baking soda, stirring well with a whisk.
Step #6 Combine granulated sugar & butter In a large-ish bowl; beat with a mixer at medium speed until well-mixed; add egg & extracts, beating well.
Step #7 Add flour mixture to sugar mixture alternately with buttermilk, beginning & ending with flour mixture; beat well after each addition.
Step #8 Spoon the batter into an 8-inch round cake pan coated with cooking spray.
Step #9 Arrange apple mixture over cake.
Step #10 Sprinkle top with almonds.
Step #11 Bake at 350° for 25 mins or until cake begins to pull away from sides of pan.
Step #12 Cool in pan on a wire rack for 10 mins.
Step #13 To prepare glaze, mix powdered sugar, 1 tsp buttermilk, & 1/4 tsp vanilla in a small bowl; stir with a whisk.
Step #14 Drizzle glaze over cake.
Step #15 Serve warm or at about room temp.
