Buttermilk-apple Coffee Cake Recipe

Ingredients
  •  Glaze:
  • 1/2 tsp almond extract
  • 1/8 tsp salt
  •  Cake:
  • 1 tsp vanilla extract
  • 1/2 c low-fat buttermilk
  • 1/4 tsp vanilla extract
  • 2 tbsps sliced almonds
  • 1/2 tsp baking soda
  • 1 large egg
  • 1/4 c sifted powdered sugar
  • 1 1/2 c thinly sliced peeled Granny Smith apple
  • 1 tbsp lemon juice
  • 3 tbsps brown sugar
  • 1 tsp low-fat buttermilk
  • 1/3 c granulated sugar
  • 2 tbsps butter, softened
  • 1 c all-purpose flour
  •  Cooking spray
  • 1/2 tsp ground cinnamon

Directions
  • Step #1 Preheat oven to 350°.
  • Step #2 To prepare the cake, mix the first 4 ingredients in a small saucepan over medium-high heat.
  • Step #3 Cook 5 mins or until syrupy, stirring frequently; cool.
  • Step #4 Lightly spoon flour into a dry measuring c; level with a knife.
  • Step #5 Combine flour, & salt in a small bowl, baking soda, stirring well with a whisk.
  • Step #6 Combine granulated sugar & butter In a large-ish bowl; beat with a mixer at medium speed until well-mixed; add egg & extracts, beating well.
  • Step #7 Add flour mixture to sugar mixture alternately with buttermilk, beginning & ending with flour mixture; beat well after each addition.
  • Step #8 Spoon the batter into an 8-inch round cake pan coated with cooking spray.
  • Step #9 Arrange apple mixture over cake.
  • Step #10 Sprinkle top with almonds.
  • Step #11 Bake at 350° for 25 mins or until cake begins to pull away from sides of pan.
  • Step #12 Cool in pan on a wire rack for 10 mins.
  • Step #13 To prepare glaze, mix powdered sugar, 1 tsp buttermilk, & 1/4 tsp vanilla in a small bowl; stir with a whisk.
  • Step #14 Drizzle glaze over cake.
  • Step #15 Serve warm or at about room temp.
