Coconut French Toast Recipe

Ingredients
  • 2 tbsps sugar
  • 1 c coconut milk
  • 1/2 c coconut cream
  • 1 loaf unsliced bread
  • 1 c whole milk
  • 1 tsp ground cinnamon
  • 2 large eggs
  • 1 tbsp vanilla extract
  •  Powdered sugar, sliced bananas, toasted coconut flakes, & maple syrup
  • 1 tbsp butter, divided

Directions
  • Step #1 Cut bread into 4 (2-inch) slices.
  • Step #2 Trim crusts, & cut each piece in half diagonally.
  • Step #3 Combine eggs & next 6 ingredients in a 13- x 9-inch baking dish.
  • Step #4 Soak bread in egg mixture.
  • Step #5 Melt 1/2 tbsp butter In a large-ish nonstick skillet or griddle.
  • Step #6 Drain two bread slices, & cook in hot butter 30 to 45 seconds on each side or until golden.
  • Step #7 Place on a foil wrap-lined baking sheet.
  • Step #8 Repeat with remaining butter & soaked bread.
  • Step #9 Bake at 350° for 15 mins.
  • Step #10 Serve with powdered sugar, sliced bananas, toasted coconut flakes, & maple syrup.
