Sour Cream Scones Recipe

Ingredients
  • 2/3 c reduced-fat sour cream
  • 1 large egg white
  •  Cooking spray
  • 2 tbsps granulated sugar
  • 3 tbsps butter, melted & cooled
  • 1 1/2 c all-purpose flour (about 6 3/4 oz)
  • 1/3 c packed brown sugar
  • 1 tbsp granulated sugar
  • 1/4 tsp ground cinnamon
  • 1/3 c dried currants or raisins
  • 2 tsps baking powder
  • 1/4 tsp salt
  • 2/3 c whole wheat flour (about 3 oz)
  • 1/2 tsp baking soda

Directions
  • Step #1 Preheat oven to 400°.
  • Step #2 Lightly spoon flours into dry measuring c; level with a knife.
  • Step #3 Combine both flours & the next 5 ingredients (through salt) In a large-ish bowl; stir well with a whisk.
  • Step #4 Combine sour cream, butter, & egg white in a small bowl.
  • Step #5 Add sour cream mixture to flour mixture, stirring just until moist.
  • Step #6 Stir in currants.
  • Step #7 Turn dough out onto a lightly floured surface; knead lightly 6 to 12 times with floured hands.
  • Step #8 (Dough will be crumbly.
  • Step #9 ) Divide dough in half.
  • Step #10 Pat each half into a 6-inch circle on a baking sheet coated with cooking spray.
  • Step #11 Cut each circle into 6 wedges; do not separate.
  • Step #12 Combine 1 tbsp granulated sugar & cinnamon.
  • Step #13 Lightly coat top of dough with cooking spray.
  • Step #14 Sprinkle top with cinnamon mixture.
  • Step #15 Bake at 400° for 15 mins or until lightly browned.
