Florentine Frittata Recipe

Ingredients
  • 1/4 tsp salt
  • 2 tbsps water
  • 1/4 tsp dried oregano
  • 2 c frozen shredded hash brown potatoes
  • 1 (10-oz) package frozen sliced spinach, thawed, drained, & squeezed dry
  • 2 c thinly sliced Vidalia or other sweet onion
  • 1 (16-oz) carton egg substitute
  • 1/2 tsp freshly ground black pepper
  • 1/2 tsp dried basil
  • 2 tsps butter
  • 1 (7-oz) bottle roasted red bell peppers, drained & sliced
  • 3/4 c (3 oz) crumbled feta cheese

Directions
  • Step #1 Combine the first 7 ingredients in a medium bowl; set aside.
  • Step #2 Melt butter in a 10-inch cast-iron or nonstick skillet over med-heat/flame.
  • Step #3 Add onion; sauté 5 mins.
  • Step #4 Add potatoes; cook 9 mins or until lightly browned, stirring every once in awhile.
  • Step #5 Pour egg mixture over onion mixture.
  • Step #6 Arrange bell pepper slices on top of frittata.
  • Step #7 Cook 7 mins or until set.
  • Step #8 Sprinkle top with cheese.
  • Step #9 Wrap handle of pan with foil wrap.
  • Step #10 Preheat broiler.
  • Step #11 Broil 5 mins or until cheese is lightly browned.
  • Step #12 Cut into 4 wedges.
