Ingredients
1/4 tsp salt
2 tbsps water
1/4 tsp dried oregano
2 c frozen shredded hash brown potatoes
1 (10-oz) package frozen sliced spinach, thawed, drained, & squeezed dry
2 c thinly sliced Vidalia or other sweet onion
1 (16-oz) carton egg substitute
1/2 tsp freshly ground black pepper
1/2 tsp dried basil
2 tsps butter
1 (7-oz) bottle roasted red bell peppers, drained & sliced
3/4 c (3 oz) crumbled feta cheese
Directions
Step #1 Combine the first 7 ingredients in a medium bowl; set aside.
Step #2 Melt butter in a 10-inch cast-iron or nonstick skillet over med-heat/flame.
Step #3 Add onion; sauté 5 mins.
Step #4 Add potatoes; cook 9 mins or until lightly browned, stirring every once in awhile.
Step #5 Pour egg mixture over onion mixture.
Step #6 Arrange bell pepper slices on top of frittata.
Step #7 Cook 7 mins or until set.
Step #8 Sprinkle top with cheese.
Step #9 Wrap handle of pan with foil wrap.
Step #10 Preheat broiler.
Step #11 Broil 5 mins or until cheese is lightly browned.
Step #12 Cut into 4 wedges.
