Step #1 Prick the eggplant in several places with a fork.
Step #2 Place it on a microwave safe dish & cook on high, until soft & collapsed, uncovered, 10 mins(or cook in 350* oven for about 30-45 mins until soft).
Step #3 Set aside to cool.
Step #4 Arrange the walnut pieces on a baking sheet, & cook at 350* F.
Step #5 about 5-7 mins until lightly toasted & fragrant(just stick in the oven with the eggplant).
Step #6 Chop fine.
Step #7 Scrape the eggplant flesh into a wooden or glass bowl & coarsely chop.
Step #8 Stir in the walnuts, chile pepper, salt, onion, parsley, garlic, & pepper.
Step #9 Then slowly beat in the oil & lemon juice.
Step #10 Adjust the seasoning to taste.
Step #11 Cover up loosely & let this stand at about room temp for several hrs before serving.
Step #12 Makes 1 1/2 c.
