Elegant Eggplant (aubergine) Caviar Recipe

Ingredients
  • 1-2 garlic clove, minced .
  • 2 tbsps extra virgin olive oil .
  • 1/2 tsp salt .
  • 1 tsp minced hot chili peppers (to taste) .
  • 1/2 c walnut pieces .
  • 1/4 c minced onions .
  • 1 tbsp fresh lemon juice .
  • 1 medium eggplant .
  • 1/4 c minced fresh parsley .
  • fresh ground black pepper, to taste

Directions
  • Step #1 Prick the eggplant in several places with a fork.
  • Step #2 Place it on a microwave safe dish & cook on high, until soft & collapsed, uncovered, 10 mins(or cook in 350* oven for about 30-45 mins until soft).
  • Step #3 Set aside to cool.
  • Step #4 Arrange the walnut pieces on a baking sheet, & cook at 350* F.
  • Step #5 about 5-7 mins until lightly toasted & fragrant(just stick in the oven with the eggplant).
  • Step #6 Chop fine.
  • Step #7 Scrape the eggplant flesh into a wooden or glass bowl & coarsely chop.
  • Step #8 Stir in the walnuts, chile pepper, salt, onion, parsley, garlic, & pepper.
  • Step #9 Then slowly beat in the oil & lemon juice.
  • Step #10 Adjust the seasoning to taste.
  • Step #11 Cover up loosely & let this stand at about room temp for several hrs before serving.
  • Step #12 Makes 1 1/2 c.
