Chipotle Veggie Enchiladas Recipe

Ingredients
  • 1/2 large yellow onion, sliced .
  • 8 portabella mushrooms, sliced .
  • 1 sliced garlic clove .
  • 1/2 c chipotle chiles, dressing .
  • 1 bunch asparagus .
  • olive oil, for sauteing .
  • 8 oz softened cream cheese .
  • 8 large flour tortillas or corn tortillas .
  • 2 tbsps sugar or Splenda sugar substitute (to taste)

Directions
  • Step #1 For sauce:.
  • Step #2 Combine dressing, cream cheese, & garlic in medium saucepan.
  • Step #3 Keep heat low, stir continually, allowing cream cheese to soften & liquify.
  • Step #4 Add sugar to taste.
  • Step #5 Set aside with lid on to keep hot.
  • Step #6 For veggie filling:.
  • Step #7 Begin with asparagus, lightly saute for appx.
  • Step #8 5 mins.
  • Step #9 Add onion, saute 2 mins.
  • Step #10 Add mushrooms, saute 2 mins.
  • Step #11 Lightly steam tortillas, wrapped in a dish cloth in the microwave for about 45 secs.
  • Step #12 Pour warm sauce in a pie dish, just enough to cover the bottom.
  • Step #13 Dip a tortilla in sauce, getting both sides nice & gooey! Lay on a plate & spoon 1/8 of veggie mixture into center.
  • Step #14 Fold tortilla around filling.
  • Step #15 Repeat for 8 enchiladas.
