Apricot Choc Chip Cake Recipe

Ingredients
  • 1/2 c chocolate chips .
  • 2/3 c sugar .
  • 1 c apricot nectar .
  • 1 c sliced dried apricots .
  • 125 g softened butter .
  • 2 eggs, separated .
  • 1 1/2 c desiccated coconut .
  • 1 1/2 c self raising flour

Directions
  • Step #1 mix apricots & nectar in bowl & stand for an hr.
  • Step #2 grease & line round cake pan.
  • Step #3 cream butter & sugar in small bowl until light & fluffy.
  • Step #4 beat in egg yolks one at a time, beat until well mixd.
  • Step #5 stir in the coconut, then half the sifted flour & half the apricot mixture, stir in the remaining flour & apricots.
  • Step #6 add choc bits.
  • Step #7 beat egg whites in bowl until soft peaks form, fold into mixture until well mixd.
  • Step #8 spread in pan & bake in oven for about 1 hr or until skewer comes out clean.
  • Step #9 stand for 5 mins before turning onto cooling rack.
  • Step #10 dust with sifted icing sugar.
