Mini Cheese Muffins With Brie Recipe

Ingredients

1 tbsp sugar (optional) .
1/2 c cooked bacon (finely sliced) .
1/4 c olive oil .
4 tsps baking powder .
1 egg .
grated cheddar cheese, extra for topping (or use crumbled blue vein for a change) .
2 c flour .
1 1/2 c milk .
2 c tasty cheddar cheese (grated) .
2 tbsps sliced parsley .
1/4 tsp salt .
125 g brie cheese (sliced)

Directions

Step #1 Pre heat the oven to 190'C/375'F.
Step #2 Beat the egg, salt & oil together lightly & set aside.
Step #3 Sift together the flour & baking powder into a bowl, stir in the the sugar (if using) & then mix in the bacon, cheese & parsley.
Step #4 Make a well in the centre & add in the egg mixture & milk.
Step #5 Mix until just mixd - do not over mix.
Step #6 Spoon into mini muffin tins & sprinkle with the extra cheese.
Step #7 Bake for 15-18 mins until golden brown.
Step #8 Remove from oven & leave in tins for 5 mins before turning out onto a rack & cover with a cloth.
Step #9 When they have cooled, make a slit in them & place this in it a small slice of Brie.
Step #10 When required, reheat in a hot oven until the cheese melts.
Step #11 This will only take a few mins.
