Kerala Fish In Fragrant Coconut Milk Recipe

Ingredients
  • 1 fresh green chile, split lengthwise (seeded if less heat is desired) .
  • 1/2 c coconut milk .
  • 1/4 tsp ground turmeric .
  • freshly sliced coriander leaves, to garnish (cilantro) .
  • 2 c thinly sliced onions .
  • 1 1/2 lbs firm white fish fillets, cut in 2-inch pieces .
  • 1 tsp ground coriander .
  • 4 tbsps vegetable oil .
  • 10-12 fresh curry leaves .
  • 1/4 tsp ground black pepper .
  • 1/2 c water .
  • 6 slices ginger, thin slices, finely sliced .
  • 1 c sliced peeled tomatoes .
  • 1/4 tsp ground cumin .
  • 1 tsp salt (or to taste) .
  • 2 medium garlic cloves, thinly sliced

Directions
  • Step #1 In a 12-inch (30-cm) skillet, chile & curry leaves, ginger, garlic, heat the oil & saute the onions, until the onions are lightly browned.
  • Step #2 Add the ground spices, tomatoes & salt & saute another 10 to 15 mins until the tomatoes are soft.
  • Step #3 Push the mixture to the sides of the skillet with a spatula & lay the fish pieces in a single layer in the middle of the pan.
  • Step #4 Smear the curry paste over the fish.
  • Step #5 Combine the coconut milk with the water & pour over the fish.
  • Step #6 Gently shake the pan to circulate the sauce, then cover & let simmer over low heat/flame for 10 mins, or more, until the fish is cooked.
  • Step #7 It should not be necessary to turn the fish.
  • Step #8 Note that the sauce will be fairly thin.
  • Step #9 Check seasoning, then transfer fish to a warm serving dish & pour the sauce over.
