Mexican Eggrolls Recipe

Ingredients
  • 1 (15 oz) can drained black beans .
  • 1 (16 oz) package egg roll wraps .
  • 1/2 tsp chili powder .
  • 1/2 tsp salt .
  • 1/2 sliced sweet red pepper .
  • 4-5 sliced green onions .
  • 2 minced fresh garlic cloves .
  • 2 c grilled boneless skinless chicken breasts (I marinade mine in 1 T oil, 2 cloves garlic, 1 t cumin, & the juice of one lime) .
  • 1 tsp cumin (can put 1/2 t more if desired) .
  • 1/2 tsp pepper .
  • oil (for frying) .
  • 2 c monterey jack cheese or Mexican mix cheese, shredded .
  • 2 c frozen sweet corn (unthawed & drained of liquid)

Directions
  • Step #1 Chop the chicken into small dices.
  • Step #2 Mix all ingredients together.
  • Step #3 Moisten the edges of an eggroll wrap & put approx 2 tbsps of filling in the middle.
  • Step #4 Fold like you would an eggroll (directions & picture are usually on the eggroll wrapper container).
  • Step #5 Make sure the flap is sealed to keep the filling inside.
  • Step #6 Heat oil to 350°F & cook just until golden browned (approximately 3-5 mins).
  • Step #7 Cut diagonally & serve this with guacamole & sour cream.
