Coffee And Banana Sponge Cake Recipe

Ingredients
  • 4 oz butter .
  • 4 oz sugar .
  • 1/2 c milk .
  • 1 tsp baking soda .
  • 2 bananas (mashed with a fork) .
  • 1 egg (lightly beaten) .
  • 1 1/2 c flour .
  • 1 pinch salt .
  • 1 tbsp coffee extract (in NZ I use 'Bushells' coffee essence) .
  • 1 tsp baking powder .
  • whipped cream, for joining

Directions
  • Step #1 #1 Way of Making;.
  • Step #2 Grease & flour or line with baking paper, a square 8" cake pan.
  • Step #3 Heat oven to 350'C/180'F.
  • Step #4 Cream together the butter & sugar until light & fluffy.
  • Step #5 Beat in the coffee essence.
  • Step #6 Mix in the mashed bananas.
  • Step #7 Add egg & milk.
  • Step #8 Sift together the dry ingredients & fold into creamed mixture.
  • Step #9 Scoop into prepared tin & bake for approx 35 mins, or until cake springs back when touched with finger & is shrinking from sides of tin.
  • Step #10 Remove from oven & cool in tin for 5mins then turn onto a rack to cool completely.
  • Step #11 When cold cut in half & fill with sweetened whipped cream & dust top this with icing sugar.
  • Step #12 #2 Way of Making;.
  • Step #13 Sift flour & baking powder & salt into bowl of mixer.
  • Step #14 Add in the sugar, egg, coffee essence & mashed bananas.
  • Step #15 Stir the baking soda into the milk & add to bowl.
  • Step #16 Melt the butter & add last.
  • Step #17 Beat on high speed until just mixed then scoop into greased & floured or, baking paper lined 8" tin.
  • Step #18 Bake 35mins approx & continue as for #1.
  • Step #19 *For a special effect ice/frost top this with coffee butter icing & decorate with sliced walnuts.
