Ingredients
  • 1 c butter, softened .
  • 1 c sliced walnuts .
  • 1 tsp baking soda .
  • 1 c white sugar .
  • 1 tbsp white sugar .
  • 1 c packed brown sugar .
  • 3/4 c unsweetened cocoa powder .
  • 2 tsps vanilla extract .
  • 2 1/4 c all-purpose flour .
  • 48 Rolo chocolates (chocolate-covered caramel candies) .
  • 2 large eggs

Directions
  • Step #1 Beat butter til creamy.
  • Step #2 Gradually add sugars, beat well.
  • Step #3 Add eggs & vanilla, beat well.
  • Step #4 Combine flour, baking soda & cocoa.
  • Step #5 Gradually add to butter mixture, beating well.
  • Step #6 Stir in ½ c nuts (optional).
  • Step #7 Cover up & chill at least 2 hrs.
  • Step #8 Preheat oven to 375°F.
  • Step #9 Combine remaining ½ c nuts with the 1 tbsps sugar.
  • Step #10 Divide dough into 4 parts.
  • Step #11 Work with one part at a time leaving the rest in the fridge.
  • Step #12 Divide each part into 12 pieces.
  • Step #13 Quickly press each piece of dough around a chocolate-covered caramel.
  • Step #14 Roll into ball.
  • Step #15 Dip one side into sugar.
  • Step #16 Place sugar-side up 2 inches apart on baking sheets.
  • Step #17 Bake for 8 mins.
  • Step #18 Let cool one min.
  • Step #19 Remove to wire rack & cool completely.
