Easy Cheesy Ham And Veggie Rice Casserole-diabetic Recipe

Ingredients
  • 6 oz reduced-sodium ham .
  • 1/2 c low-fat milk .
  • 2 oz swiss cheese, broken into small pieces .
  • 2 c broccoli florets .
  • 1 c carrots, thinly sliced .
  • 1/4 tsp ground cayenne pepper .
  • 1 tbsp reduced-calorie margarine .
  • 3 oz low-fat cheddar cheese, shredded .
  • 2 c cooked brown rice

Directions
  • Step #1 Have rice already cooked & set aside.
  • Step #2 In 2 c boiling water, bring back to a boil, drop the broccoli & carrots, reduce heat & let simmer for 3 mins.
  • Step #3 Drain veggies.
  • Step #4 Put vegetables & cooked rice back in sauce pan & put pan back on medium-low heat.
  • Step #5 Add ham, milk, Swiss cheese, 1 oz of the cheddar, margarine & cayenne & stir carefully.
  • Step #6 Sprinkle top the remaining cheese evenly over the top, cover & cooke for 3 mins, or until the cheese melts.
