Chicken And Mandarin Oranges Recipe

Ingredients
  • 1 (11 oz) can mandarin oranges
  • 1 small onion, sliced
  • 2 tsps cornstarch
  • 4 (4 oz) boneless, skinless chicken breast halves
  • 1 tbsp canola oil
  • 1/4 tsp pepper
  • 2 tbsps water
  • 1/2 tsp ground ginger
  • 1/2 tsp salt
  • 1/4 c minced fresh cilantro
  • 1/8 tsp crushed red pepper flakes
  • Hot cooked rice

Directions
  • Step #1 In a small bowl, mix the salt, ginger & pepper.
  • Step #2 Sprinkle top over both sides of chicken.
  • Step #3 In a nonstick skillet, saute chicken in oil for 2 mins on each side or until browned.
  • Step #4 Remove chicken to plate & keep warm.
  • Step #5 Reduce heat to medium-low.
  • Step #6 Drain oranges, reserving juice.
  • Step #7 Stir juice, onion & red pepper flakes into skillet.
  • Step #8 Cook & stir for about 3 mins or until onion is tender.
  • Step #9 Bring to a boil.
  • Step #10 Return chicken to skillet.
  • Step #11 Reduce heat; cover & cook for about 10 mins or until chicken juices run clear.
  • Step #12 Place chicken over rice; keep warm.
  • Step #13 Combine cornstarch & water until smooth.
  • Step #14 Gradually stir in theto skillet.
  • Step #15 Bring to a boil; cook & stir for about 2 mins or until mixture is thickened.
  • Step #16 Add mandarin oranges; heat through.
  • Step #17 Pour sauce over chicken.
  • Step #18 Sprinkle top with cilantro.
