Bluebery Cream Cheese Roll Recipe

Ingredients
  • 1/2 tsp salt .
  • FILLING .
  • 2 tbsps confectioners' sugar .
  • 1 c flour .
  • 14 oz blueberries .
  • 1/3 c hot water .
  • 1 tsp baking powder .
  • CAKE .
  • 1 tsp grated lemon rind .
  • 1/8 tsp ground mace .
  • 1/2 c sugar .
  • 3 large eggs, room temperature .
  • 2 tbsps milk .
  • 1 tbsp fresh lemon juice .
  • 1 tbsp butter .
  • 1 c sugar .
  • 3 oz cream cheese, softened .
  • 3 tbsps cornstarch .
  • 1/4 tsp salt .
  • 1 tsp vanilla extract

Directions
  • Step #1 Preheat oven to oven to 375*.
  • Step #2 Sift together the flour, baking powder, & salt.
  • Step #3 In a large mixer bowl, beat the eggs at high speed until lemon colored.
  • Step #4 slowly add the sugar a tblespoon at a time, beating constantly; add the vanilla.
  • Step #5 Reduce speed to slow & add the flour mixture to the egg mixture, beating only until mixed.
  • Step #6 add the hot water all at once & beat to a smooth batter.
  • Step #7 Line a 15x10" jelly roll pan with wax paper & grease.
  • Step #8 Spread the batter evenly over the pan.
  • Step #9 Bake for 12-14 mins or until the cake is golden & springs back when you touch it lightly with your finger.
  • Step #10 Loosen the cake carefuly from the sides of the pan with spatula.
  • Step #11 Sift powdered sugar over the cake, cover with a dish towel.
  • Step #12 Peel off the wax paper & quickly trim off the crisp edges with a sharp knife.
  • Step #13 Beginning at short end, roll the cake & towel together into a firm roll.
  • Step #14 cool on a rack while you prepare the filling.
  • Step #15 in a mixer bowl, beat the cream cheese with the milk until smooth -- & fluffy.
  • Step #16 set aside.
  • Step #17 in a saucepan, cornstarch, lemon rind, mix the sugar, & salt.
  • Step #18 place a strainer over the pan & drain the juice from the blueberries into the mixture, setting the berries aside.
  • Step #19 cook over med-heat/flame until thick, stirring constantly.
  • Step #20 Remove from the heat & stir in the the butter, lemon juice & mace.
  • Step #21 Carefully fold in the blueberries.
  • Step #22 chill in the fridge.
  • Step #23 carefully unroll the cake & spread the cream cheese mixture thinly over the entire surface.
  • Step #24 Spread the blueberry mixture over the cream cheese to within 1/2" of the edges, & reroll the cake.
  • Step #25 place the roll, seam side down on a rectangular tray & put in the fridge until 30 mins before serving.
  • Step #26 cut into 1" slices & serve.
