Grilled Salmon With Dilled Mustard Glaze Recipe

Ingredients
  • 1 1/2 tsps dark brown sugar .
  • 1 tbsp dill, finely sliced .
  • fresh ground pepper .
  • salt .
  • 1 1/2 tsps fresh lime juice .
  • 2 lbs salmon fillets, skin on (One, 2-lb Salmon Fillet, skin on) .
  • 1/4 c mayonnaise .
  • 1/4 c whole grain mustard .
  • 1 tbsp olive oil .
  • vegetable oil, for the grill .
  • 1 tbsp yellow mustard seeds

Directions
  • Step #1 Toast mustard seeds over moderate heat until they darken & begin to pop, about 2 mins.
  • Step #2 Transfer to a plate & set aside.
  • Step #3 In a mixing bowl, dill, whisk mayonnaise with mustard, lime juice & brown sugar.
  • Step #4 Spice up with pepper.
  • Step #5 Set Aside.
  • Step #6 Light a gas grill & lightly brush grate with oil.
  • Step #7 Run your fingers over the salmon fillet, feeling for bones.
  • Step #8 Use tweezers to remove any bones you find.
  • Step #9 Brush skin side of salmon with olive oil & season this with salt & pepper.
  • Step #10 Place fillet on grill, skin side down, & spread the mustard glaze over the fish.
  • Step #11 Sprinkle top with mustard seeds.
  • Step #12 Close grill & cook over moderate heat until glaze is golden & salmon is nearly opaque, about 25 mins.
  • Step #13 Check on salmon & make sure skin does not begin to char.
  • Step #14 If skin does char move to cooler part of grill & reduce heat.
  • Step #15 Transfer the salmon to a platter & serve hot or at about room temp.
