Low Fat Blueberry Muffins Recipe

Ingredients
  • 2 tbsps canola oil .
  • 1/2 tsp baking soda .
  • 2 c all-purpose flour .
  • 1 c nonfat milk or soy milk (you can also use low fat buttermilk) .
  • 1/3 c sugar .
  • 1 tsp baking powder .
  • 1/4 tsp salt .
  • 1 c blueberries .
  • 1 large egg, lightly beaten or 1/4 c Egg Beaters egg substitute

Directions
  • Step #1 Preheat oven to 400F degrees.
  • Step #2 Coat a nonstick 12-c muffin pan with cooking spray or line with paper c.
  • Step #3 In a large bowl, sugar, baking powder, stir flour, baking soda & salt together.
  • Step #4 In a small bowl, mix milk, canola oil & egg.
  • Step #5 Make a well in the center of the dry ingredients & add milk, oil & egg mixture.
  • Step #6 Stir until just moist.
  • Step #7 Fold in blueberries.
  • Step #8 Fill muffin c 2/3 full & bake 18-20 mins until golden.
  • Step #9 Cool on wire rack.
