Mexican Shepherd's Pie Recipe

Ingredients
  • 2 c canned corn niblets .
  • 1 lb ground beef .
  • 2 lbs potatoes, peeled & sliced .
  • 1 1/4 oz taco seasoning mix .
  • 1 c cheddar cheese, shredded

Directions
  • Step #1 Brown & drain ground beef.
  • Step #2 Add taco seasoning to taste [we prefer a less spicy mix, so I only use half the envelope].
  • Step #3 Add corn.
  • Step #4 Meanwhile, boil potatoes until tender, then mash.
  • Step #5 If you like, you can add butter & milk.
  • Step #6 Spread about one third of the potatoes in a round 2 quart casserole dish.
  • Step #7 Top with the ground beef mixture, then the cheese.
  • Step #8 Finish with the remaining potatoes.
  • Step #9 To use right away, bake this at 350 about 30 mins.
  • Step #10 To freeze, cover & freeze until solid.
  • Step #11 Lift out of casserole dish & wrap in foil wrap.
  • Step #12 Place in zipper bag, label with name & date.
  • Step #13 Use within 3 months.
  • Step #14 To reheat, unwrap & place this in original dish, defrost completely.
  • Step #15 Bake at 375 for 40-45 mins.
