Cauliflower Gratin With Manchego And Almond Sauce Recipe

Ingredients
  • fresh ground pepper .
  • 2 tbsps all-purpose flour .
  • 2 tbsps almonds, coarsely sliced .
  • 1/4 tsp paprika (Pimenta de la Vera- smoked Spanish paprika) .
  • 1 medium onion, finely sliced .
  • 2 tbsps manchego cheese, finely shredded or gouda cheese .
  • 4 tbsps unsalted butter .
  • 3/4 c half-and-half .
  • 1/2 c almonds, whole roasted with skin .
  • nutmeg, freshly grated .
  • 3/4 c manchego cheese, finely shredded (or other mildly nutty semi-aged sheep's or cow's-milk cheese) or gouda cheese, plus .
  • 1 c whole milk .
  • 2 lbs cauliflower, cut into 1 1/2-inch florets

Directions
  • Step #1 Preheat the oven to 400°; In a small saucepan, then transfer it to a food processor/blender or mixer; Add the 1/2 c of whole almonds & process until finely ground; Let stand for 10 mins; Strain the half-and-half through a fine sieve set over a bowl, heat the half-and-half until steaming, pressing on the almonds to extract as much liquid as possible; Discard the ground almonds.
  • Step #2 In a medium saucepan, until thickened, whisking constantly, melt 2 tbsps of the butter; Add the flour & whisk over moderately high heat for 1 min; Add the milk & the half-and-half & cook, 5 mins; Remove from the heat; Add 3/4 c of the Manchego & whisk until melted; Whisk in the nutmeg; season this with salt & pepper.
  • Step #3 Keep warm.
  • Step #4 In a large skillet, bring 1/2 inch of salted water to a boil; Add the cauliflower, cover & cook over high heat until crisp-tender, about 4 mins; Drain the cauliflower in a colander; Wipe out the skillet.
  • Step #5 Melt the remaining 2 tbsps of butter in the skillet; Add the onion & cook over moderately high heat, stirring until lightly browned, about 5 mins; Add the cauliflower & cook, stirring until lightly golden, about 2 mins; Spice up lightly with salt & pepper; Transfer the cauliflower to a 7-by-10-inch glass or ceramic baking dish & spread the Manchego sauce on top.
  • Step #6 Sprinkle top the gratin with the remaining cheese, the 2 tbsps of sliced almonds & the paprika & bake in the center of the oven for 20 mins, or until bubbling & browned on top; Let stand for 10 mins before serving.
