1 c buttermilk (or 1 tbsp vinegar with milk to make 1 c) .
2 tsps vanilla .
1/3 c applesauce .
3 (1 oz) unsweetened chocolate squares .
1 tsp baking soda .
1 egg .
1/2 c sliced walnuts (optional) .
1 3/4 c all-purpose flour .
1/2 tsp salt .
1/2 c mini chocolate chips .
1/4 c butter .
1 tsp baking powder .
1/2 c oil
Directions
Step #1 Set oven to 350 degrees.
Step #2 Grease an 8 x 8-inch baking dish.
Step #3 In the microwave, melt the chocolate & butter for about 1 min, then whisk or stir until smooth; set aside.
Step #4 In a bowl mix flour, sugar, baking powder, baking soda & salt; set aside.
Step #5 In a medium mixing bowl, oil, applesauce, mix the buttermilk, vanilla & egg, then add to the dry ingredients along with the chocolate mixture; mix until mixd.
Step #6 Add in mini chocolate chips & nuts (if using).
Step #7 Pour into prepared baking dish.
Step #8 Bake for about 40-45 mins, or until cake test done.
