Arroz Con Pollo - Cuban Style Recipe

Ingredients
  • 1 (12 oz) arborio rice .
  • 2 fresh garlic cloves, sliced fine .
  • 2 tsps salt .
  • 2 tbsps pepper .
  • 6 (12 oz) bottles beer .
  • 1 small green pepper, sliced fine .
  • 5 c hot chicken broth .
  • 2 tbsps cumin .
  • 4 tbsps corn oil .
  • 2 medium onions, sliced fine .
  • 2 tbsps garlic powder .
  • 1 lb boneless chicken breasts .
  • 2 tbsps onion powder

Directions
  • Step #1 cut chicken breasts into bite size cubes.
  • Step #2 season this with 1 tsp of salt, garlic powder,pepper, onion powder & cumin.
  • Step #3 set aside.
  • Step #4 heat chicken broth.
  • Step #5 in an large iron pot put 2 tbsps corn oil, add chicken breasts & fry until brown.
  • Step #6 Don't cook the chicken completely.
  • Step #7 Take chicken out & set aside.
  • Step #8 To the same pot add 2 tbsps of oil & add sliced onions, garlic & green peppers saute until onions are soft about 3 mins.
  • Step #9 Add pearl rice & saute for about 2 mins to seal the rice.
  • Step #10 Start adding your liquid 1/2 c of broth & 1 bottle of beer.
  • Step #11 when rice has absorbed the liquid repeat step.
  • Step #12 1/2 c of chicken broth & one bottle of beer continue until rice is soft, stiring contesntly after each addition of liquid.
  • Step #13 Add the remaining 1 tsp of salt.
  • Step #14 When rice is almost cooked, add your chicken breast back into pot.
  • Step #15 Continue to cook this until rice it fully cooked.
  • Step #16 Rice should be wet not dry.
  • Step #17 Serve as soon as possible.
