Almond Chicken And Rice Casserole Recipe

Ingredients
  • 2 c long grain rice .
  • 3-4 tbsps butter .
  • sliced almonds .
  • 2 (10 1/2 oz) cans cream of chicken soup .
  • 1 (10 1/2 oz) can cream of mushroom soup .
  • parmesan cheese .
  • 1/2 c milk .
  • 4-5 boneless skinless chicken breasts .
  • parsley

Directions
  • Step #1 Melt butter & add soups & milk.
  • Step #2 Reserve 1 C soup mixture.
  • Step #3 Add rice to remaining soup mixture.
  • Step #4 Pour into 9x13 baking dish.
  • Step #5 Cut chicken breasts into thirds & place on top of rice & soup.
  • Step #6 Pour remaining c of soup over all.
  • Step #7 Sprinkle top with parmesan cheese, parsley & almonds on top.
  • Step #8 Bake covered at 350 degrees for about 1 1/2 hrs.
  • Step #9 Check after one hr & stir rice.
  • Step #10 **Sometimes I like to make this with lower fat content.
  • Step #11 When I do I decrease the amount of rice by 1/2 C, eliminate 1 can of cream of chicken soup & add in the place 1 1/2 C chicken broth & leave out the butter & almonds.
  • Step #12 It is still very creamy & very tasty.
  • Step #13 I also use lowfat cream soups.
