Curried Chicken With Peaches Recipe

Ingredients
  • 1 1/2 tbsps flour .
  • 1/2 c coconut milk .
  • 2 c chicken stock .
  • 1 tbsp red currant jelly (or juice of half a lemon mixed with 2 tsp sugar) .
  • 1 garlic clove, crushed .
  • 1 medium onion, sliced fine .
  • 4 skinless chicken breast halves .
  • 2 ripe peaches, cut in half .
  • 1 1/2 tbsps curry powder .
  • 2 tbsps olive oil or butter .
  • 1 tbsp stock .
  • 3-4 tbsps heavy cream .
  • 1 tsp arrowroot

Directions
  • Step #1 Brown the chicken breasts slowly in half the oil.
  • Step #2 When brown on all sides, remove this from pan & keep warm.
  • Step #3 Heat remaining oil or butter in the same pan.
  • Step #4 Add onion & carefully cook this until brown.
  • Step #5 Stir in curry powder & cook 3 mins.
  • Step #6 Sprinkle top in flour & cook 1 min.
  • Step #7 Remove from heat & pour in stock.
  • Step #8 Add garlic & bring to a boil.
  • Step #9 Simmer 20 mins.
  • Step #10 Return chicken to pan.
  • Step #11 Cover up & cook for 45 mins or until tender.
  • Step #12 Transfer chicken to a casserole dish.
  • Step #13 Strain sauce into a pan.
  • Step #14 Add coconut milk & red currant jelly & let simmer 3 mins.
  • Step #15 Stir in heavy cream into curry sauce & thicken if needed with arrowroot made into a paste with 1 Tbsp stock.
  • Step #16 Add peaches & heat.
  • Step #17 Pour over chicken.
  • Step #18 Serve with rice.
