Greens With Tangy Miso Dressing Recipe

Ingredients
  • 1 c onions, cut into half moons .
  • 1/4 c lemon juice, freshly squeezed .
  • 1 c red bell peppers, seeded & cut julienne .
  • 1/4 c white miso .
  • 4 c napa cabbage or bok choy, cut julienne .
  • SALAD .
  • 1 tbsp honey or brown rice syrup .
  • 1 tbsp tamari soy sauce .
  • DRESSING .
  • 2 tbsps tahini .
  • 1/2 tsp turmeric .
  • 2 tsps fresh dill weed or 1 tsp dried dill .
  • 4 c kale, stemmed & cut julienne .
  • 2/3 c water .
  • 1 tbsp toasted sesame oil .
  • 1/4 c water

Directions
  • Step #1 SALAD -----------.
  • Step #2 In large skillet over medium high heat, saute onions in the sesame oil for 5 mins.
  • Step #3 Add pepper, toss & saute for 3 mins.
  • Step #4 Add kale & 1/3 c of water.
  • Step #5 Cook until liquid has evaporated.
  • Step #6 Add cabbage, tamari & remaining 1/3 c of water.
  • Step #7 Cook until greens are tender, about 5 mins.
  • Step #8 DRESSING -----------.
  • Step #9 Stir miso & tahini together in a bowl.
  • Step #10 Add lemon juice & water & mix well.
  • Step #11 Stir in remaining ingredients.
  • Step #12 ASSEMBLE -----------.
  • Step #13 Divide salad into 4 servings & spoon 2 tbsp of Tangy Miso Dressing over each.
