Beef And Spinach Or Silverbeet Rolls Recipe

Ingredients
  • fresh ground black pepper .
  • 4 lean beef schnitzel .
  • 1 c grated apples (leave the skin on) .
  • 4-8 spinach leaves or silver beet leaves .
  • 1/2 tsp prepared mustard .
  • 1/2 c water .
  • 1 tsp cornflour .
  • 1 tbsp prepared mustard

Directions
  • Step #1 Trim schnitzels of any visible fat.
  • Step #2 Spread each evenly with the first measure of mustard.
  • Step #3 Place a spinach or silverbeet leaf on top of each & trim to fit.
  • Step #4 Sprinkle top over the grated apple & pepper.
  • Step #5 Roll each up 'swiss roll' style & secure with toothpicks.
  • Step #6 Heat a little oil in a frying pan & add the rolls.
  • Step #7 Cook carefully, turning often to brown evenly, for approx 12-15 mins.
  • Step #8 Add 2-3 Tablespoons of water if the pan starts to dry out.
  • Step #9 When cooked, remove this from pan & keep warm.
  • Step #10 Blend the half c of water with the second measure of mustard & the cornflour.
  • Step #11 Add this to the pan & stir well until it thickens.
  • Step #12 Add the rolls back in to coat with sauce or place rolls on warmed serving plates & top this with the sauce.
