Sourdough Malt Beer Bread Recipe

Ingredients
  • 1 c white bread flour .
  • 1 1/2 c water .
  • 1 1/2 c white bread flour .
  • 1/2 c rye flour .
  • 1 1/2 tsps salt .
  • 2 tbsps butter, melted .
  • 1/2 c malt beer .
  • 2 tbsps sourdough starter .
  • 1 tbsp brown sugar, packed .
  • 1 1/2 c rye flour

Directions
  • Step #1 Sourdough Build: Mix the first four ingredients together.
  • Step #2 Cover up loosely & let sit at about room temp for 12 to 16 hrs.
  • Step #3 Dough: Measure out 2 c of the sourdough build mixture (discard extra).
  • Step #4 Add beer, salt, sugar & butter.
  • Step #5 Mix in the flours.
  • Step #6 Turn dough out onto a lightly floured surface & knead until it is smooth & satiny.
  • Step #7 Cover up dough & let it rest for 20 mins.
  • Step #8 Shape into desired loaf--freeform or pan loaf.
  • Step #9 Proof, covered, until dough doubles in size.
  • Step #10 this may take several hrs.
  • Step #11 Preheat oven to 375°.
  • Step #12 Slash loaf with a very sharp blade.
  • Step #13 Bake for 30 to 50 mins, depending on shape of loaf.
  • Step #14 Remove from pan (if used) & cool on wire rack.
