Creole Mexican Catfish Recipe

Ingredients
  • 1/2 tsp salt
  • 1/2 tsp dried thyme
  • 1/2 tsp dried dill weed
  • 1/2 tsp cayenne pepper
  • 1/4 c margarine, melted
  • 4 (4 oz) fillets catfish
  • 1/2 tsp garlic powder
  • 1 (10 oz) can sliced tomatoes with green chile peppers, partially drained
  • 1/2 tsp black pepper

Directions
  • Step #1 Preheat oven to 350 degrees F (175 degrees C).
  • Step #2 Lightly grease a medium baking dish.
  • Step #3 In a medium bowl, mix the cayenne pepper, thyme, salt, dill weed, garlic powder, & pepper.
  • Step #4 Brush catfish fillets with the margarine, & dip into the spice mixture to coat.
  • Step #5 Arrange catfish fillets in the prepared baking dish, & bake 30 mins in the preheated oven.
  • Step #6 Top with the partially drained sliced tomatoes with green chile peppers, & continue baking 10 mins, until fish is easily flaked with a fork.
