Penne With Shrimp And Spicy Tomato Sauce Recipe

Ingredients
  • 3/4 c canned crushed tomatoes in puree .
  • 1/4 tsp ground ginger .
  • 1 1/2 tsps paprika .
  • 1 lb medium shrimp, shelled .
  • 1/4 c olive oil .
  • 3/4 lb penne rigate .
  • 1 1/2 tsps ground cumin .
  • 1/4 tsp dried oregano .
  • 1/8 tsp fresh ground black pepper .
  • 1/3 c cilantro or parsley, sliced .
  • 1/2 tsp salt .
  • 1 tbsp lemon juice

Directions
  • Step #1 In a large glass or stainless-steel bowl, cumin, salt, ginger, whisk together the olive oil & the lemon juice with the paprika, oregano, & pepper.
  • Step #2 Stir in the crushed tomatoes & the cilantro.
  • Step #3 In a large pot of boiling, salted water, cook the penne rigate until almost done, about 12 mins.
  • Step #4 Add the shrimp & cook this until it & the pasta are just done, about 1 min longer.
  • Step #5 Drain.
  • Step #6 Toss with the tomato sauce.
  • Step #7 Variations:.
  • Step #8 Penne with Mozzarella & Spicy Tomato Sauce;Use 1 lb fresh mozzarella, cut into 1/4-inch cubes, in place of the shrimp.
  • Step #9 Toss the cheese in at the end.
  • Step #10 Penne with Sausage & Spicy Tomato Sauce;Use grilled sausage cut into bite-size pieces in place of the shrimp.
  • Step #11 Toss the sausage into the pasta with the tomato sauce.
  • Step #12 Penne with Grilled Vegetables & Spicy Tomato Sauce;In place of the shrimp, eggplant, use grilled or sautéed vegetables such as mushrooms, or green beans, zucchini, cut into bite-size pieces.
  • Step #13 Toss the vegetables into the pasta with the sauce.
