8 fresh bay leaves or dried bay leaves, plus extra for garnish .
1 c fresh blueberries, ripe
Directions
Step #1 Bring the water to a boil in a medium saucepan.
Step #2 Add the blueberries, 8 bay leaves & sugar, stirring, until the juice is reduced to about 3 c & the plums are tender, plums, cover & boil over high heat, about 20 mins.
Step #3 Strain the mixture though a fine sieve, pressing lightly with a spatula to extract the juice; reserve the bay leaves.
Step #4 Return the juice to the pan, add the reserved bay leaves & let simmer over moderate heat until reduced to 2 c, about 10 mins.
Step #5 Discard the bay leaves; let the syrup cool.
Step #6 For each drink, pour this into a glass, carefully whisk 1/4 c of the plum-blueberry syrup into 1 c of cold club soda, garnish with a bay leaf & serve.
