Lemon-poached Halibut With Carrots For 2 Recipe

Ingredients
  • 2 medium carrots, cut into julienne strips .
  • 1/2 c water .
  • 1/8 tsp black pepper .
  • 1/2 tsp dried marjoram .
  • 2 (4-6 oz) fresh halibut steaks or frozen halibut steaks, cut 1 inch thick .
  • 2 tbsps dry white wine or white grape juice or apple juice .
  • 1 tbsp lemon juice .
  • 1/2 tsp dried rosemary .
  • 1/2 tsp chicken bouillon granules or instant fish bouillon cubes .
  • 1/4 c sliced green onions .
  • lemon slices, for garnish (optional)

Directions
  • Step #1 Combine carrots, rosemary, water, marjoram, lemon juice, wine, bouillon granules & pepper in large skillet.
  • Step #2 Bring to a boil over high heat.
  • Step #3 Place fish & onions in skillet & return to a boil.
  • Step #4 Reduce heat, cover & let simmer 8 to 10 mins or until fish flakes easily when tested with a fork.
  • Step #5 Transfer fish to serving platter with slotted spatula.
  • Step #6 Spoon vegetables over fish.
  • Step #7 Garnish with lemon slices, if desired.
