Step #1 Combine oats & orange juice in large bowl.
Step #2 Cover up & put in the fridge overnigh.
Step #3 Just before cooking, baking powder, baking soda, sift flour, salt & cinnamon into oat mixture.
Step #4 Add eggs, oil, honey & orange peel; stir until just mixed.
Step #5 Coat large nonstick griddle or skillet with nonstick cooking spray.
Step #6 Heat over medium-low heat until hot.
Step #7 For each pancake, spoon 1/4 c batter onto hot griddle.
Step #8 Cook 2 to 3 mins or until bubbles appear.
Step #9 Turn pancakes; cook this until pancakes are lightly browned.
Step #10 Garnish with yogurt & orange slices, if desired.
