Pizza Calzones - Diabetic Recipe

Ingredients
  • 1/4 c skim milk .
  • 1/4 tsp crushed red pepper flakes (flakes) .
  • 1/4 tsp pepper, freshly ground .
  • 8 oz ground chicken (or beef or pork) .
  • 4 tsps baking powder .
  • 1/2 tsp salt .
  • 1 medium onion, sliced (about 1 c) .
  • 3 tbsps canola oil (I use Becel oil) .
  • 2/3 c whole wheat flour .
  • 1/2 tsp dried oregano .
  • 3/4 c part-skim mozzarella cheese .
  • 1 c grated zucchini (or sliced broccoli) .
  • 3/4 c skim milk .
  • 1 (7 1/2 oz) can tomato sauce .
  • 1/3 c all-purpose flour .
  • 1 tsp dried basil .
  • 1 c all-purpose flour .
  • 1/4 c parmesan cheese, grated (or shredded) .
  • 2 large garlic cloves, smashed

Directions
  • Step #1 Saute chicken, onion, garlic & zucchini In a large-ish non stick fry pan until no pink remains in chicken & liquid is evaporated.
  • Step #2 Stir in tomato sauce, basil, oregano, pepper & chillies flakes.
  • Step #3 Heat, uncovered on low for 10 mins until thickened.
  • Step #4 Remove from heat.
  • Step #5 Let stand to cool slightly; stir in the cheeses.
  • Step #6 Set aside.
  • Step #7 Combine whole wheat flour, first amount of all purpose flour, baking powder & salt In a large-ish bowl; make a well in the centre.
  • Step #8 Combine canola oil & first amount of milk in a small bowl; add all at once to the dry ingredients; stir with a fork, just until moistened.
  • Step #9 Turn out onto a lightly floured board using second amount of all purpose flour; carefully knead dough 8 to 10 times.
  • Step #10 Divide dough into 8 portions; roll each out to a 6 inch circle.
  • Step #11 Place 1/3 c filling to one side of centre, moisten edge of dough with some of the second amount of milk.
  • Step #12 Bring unfilled side of dough over filling & press edges together with fork tines to seal well.
  • Step #13 Cut slits in top this with tip of a sharp knife; place on greased baking sheet.
  • Step #14 Brush with remaining milk; bake in 400F degree oven for 15 to 18 mins until golden brown.
  • Step #15 Diabetic choices: 2 starch; 1/2 fruit & veggies; 1 1/2 protein; 1 fat & oil.
