2 Points - Japanese Grilled Eggplant (aubergine) Recipe

Ingredients
  • cooking spray (5 one-second sprays per serving) .
  • 1 1/2 tsps rice wine vinegar .
  • 2 tbsps low sodium soy sauce .
  • 1 tsp gingerroot, freshly grated .
  • 1/4 tsp minced garlic .
  • 4 medium eggplants, Japanese (about 1 lb. sliced crosswise on the diagonal into 1/2-inch-thick pieces) .
  • 1/4 c scallions, thinly sliced on the diagonal .
  • 1 tbsp fresh lemon juice

Directions
  • Step #1 Preheat outdoor grill, stove-top grill pan or broiler.
  • Step #2 Coat eggplant with cooking spray.
  • Step #3 (Note: If you can’t find any Japanese eggplants, buy regular eggplants that are small in size.
  • Step #4 ).
  • Step #5 Grill or broil eggplant turning as needed until lightly charred & tender, about 7 to 9 mins.
  • Step #6 Whisk soy sauce, lemon juice, vinegar, ginger & garlic in a small bowl until mixed.
  • Step #7 Drizzle over grilled eggplant & sprinkle with scallions.
  • Step #8 2 points per serving - Yields about 3/4 c per serving.
