Ingredients
  • 1/4 c shredded mozzarella cheese
  • 1 (9 inch) unbaked pie crust
  • salt & pepper to taste
  • 1 tsp dried parsley
  • 1/4 tsp dried thyme
  • 4 eggs
  • 1 small onion, sliced
  • 2 tbsps milk
  • 1/2 c shredded Cheddar cheese
  • 2 tbsps all-purpose flour
  • 8 slices bacon

Directions
  • Step #1 Preheat oven to 350 degrees F (175 degrees C).
  • Step #2 Place bacon in a large, deep skillet.
  • Step #3 Cook over medium high heat until evenly brown.
  • Step #4 Drain (reserving 1 tbsp of grease) crumble bacon & set aside.
  • Step #5 Heat reserved bacon grease in skillet & saute onion until soft.
  • Step #6 In a large bowl, flour, beat together eggs, thyme, parsley, milk, salt & pepper.
  • Step #7 Add bacon, onion, mozzarella & cheddar cheese; mix well.
  • Step #8 Pour mixture into pie crust.
  • Step #9 Bake in preheated oven until lightly brown on top & firm in the middle.
  • Step #10 Serve warm.
