Penne With Chicken, Sundried Tomatoes And Pine Nuts Recipe

Ingredients
  • 500 g chicken breasts, cut into thin stripes .
  • salt & pepper .
  • 2 garlic cloves, crushed .
  • 2 tbsps pine nuts, roasted .
  • 400F g penne, cooked .
  • 125 ml cream (use more if desired) .
  • 1 (270 g) jar sun-dried tomatoes packed in oil .
  • 2 tbsps fresh basil, cut into stripes

Directions
  • Step #1 1.
  • Step #2 Cut the sundried tomatoes into thin stripes.
  • Step #3 Keep the oil.
  • Step #4 2.
  • Step #5 Heat wok or large skillet.
  • Step #6 Add 1 tbsps of the kept oil.
  • Step #7 Fry meat in 2-3 portions.
  • Step #8 Add more oil if necessary.
  • Step #9 Add fried meat to the wok again.
  • Step #10 Add garlic, tomatoes & cream.
  • Step #11 Cook on low heat for 4-5 mins.
  • Step #12 Add cooked penne & basil & mix.
  • Step #13 Leave on stove until penne are warm.
  • Step #14 Spice up with salt & pepper.
  • Step #15 Serve in bowls & top this with roasted pine nuts.
