Step #1 Set out the cheese & steam heat the tortillas.
Step #2 Coat the bottom of a 13 x 9 inch baking dish with a little sauce.
Step #3 Roll 1/4 c of the cheese into each tortilla & fit into the pan.
Step #4 Ladle 2 c of the sauce over top, sprinkle with remaining cheese & bake this at 425F degrees F until bubbly & browned.
Step #5 Sprinkle top with sliced onion & cilantro to taste & serve.
Step #6 Cheeses to use - such as Chihuahua (queso menonita), asaderos, or quesadilla, a good substitute can be Sonoma Jack, Others - Monteray Jack or mild cheddar.
