Step #1 Heat oven to 450*F.
Step #2 In a medium bowl mix the fresh herbs & set aside.
Step #3 In another bowl mix the bread crumbs & cheese & set aside.
Step #4 Place the beaten eggs in a third bowl.
Step #5 Spice up the chops on each side with the salt & pepper.
Step #6 Press the fresh herbs into each side of the chops, covering completely.
Step #7 Dip chops into the beaten egg & then into the bread crumb mixture, coating them well.
Step #8 In a large nonstick skillet with a heat resistant handle, heat olive oil over medium high heat.
Step #9 Add chops & cook this until lightly browned, about 2 mins on each side.
Step #10 Carefully turn the chops & brown the edges, about 30 seconds.
Step #11 Transfer the skillet to the oven & finish cooking the chops until medium rare, about 2 mins.
