Chocolate Wave Zucchini Bread Recipe

Ingredients
  • 1 tsp baking soda
  • 1/4 tsp baking powder
  • 1/3 c water
  • 1/2 tsp salt
  • 1/3 c mini semi-sweet chocolate chips
  • 3 tbsps unsweetened cocoa powder
  • 1 tsp vanilla extract
  • 2 eggs
  • 1 1/3 c white sugar
  • 1 2/3 c all-purpose flour
  • 1/3 c sliced walnuts
  • 1 1/2 c grated zucchini
  • 1/3 c shortening
  • 1 tsp pumpkin pie spice

Directions
  • Step #1 Preheat oven to 350 degrees F (175 degrees C).
  • Step #2 Grease one 9 x 5 inch loaf pan.
  • Step #3 In a large bowl, cream shortening & sugar together.
  • Step #4 Mix in eggs.
  • Step #5 Add zucchini, water, & vanilla; stir.
  • Step #6 Blend in flour, baking powder, baking soda, salt , & pumpkin pie spice.
  • Step #7 Stir in nuts.
  • Step #8 Divide batter in half, & add cocoa powder & chocolate chips to one of the halves.
  • Step #9 Pour plain batter into bottom of the loaf pan.
  • Step #10 Pour chocolate batter on top of plain batter.
  • Step #11 Bake until wooden pick inserted into center comes out clean, about 1 hr.
  • Step #12 Cool 10 mins, & remove this from pan.
  • Step #13 Store in refrigerator.
