Creamed Chicken Over Cornmeal Rings Recipe

Ingredients
  • 1 tsp garlic, minced .
  • 1/2 c flour .
  • 3 slices bacon .
  • 1 egg, beaten .
  • 1 c chicken stock .
  • frozen green peas (optional) .
  • 1 tsp tarragon .
  • 1/2 c butter .
  • Creamed Chicken Sauce .
  • 1 (6 1/2 oz) package yellow cornmeal mix .
  • 2 c half-and-half cream .
  • fresh parsley sprigs .
  • 1 (4 oz) jar pimientos, drained & sliced .
  • 3 c cooked chicken, sliced .
  • white wine (optional) .
  • Cornmeal rings .
  • 3/4-1 c buttermilk .
  • 1 (6 oz) jar mushrooms, sliced, drained .
  • 1 tbsp parsley

Directions
  • Step #1 In heavy skillet, fry bacon until crisp.
  • Step #2 Remove to paper toweling to drain & cool.
  • Step #3 Reserve drippings.
  • Step #4 Mix cornmeal as directed with milk & eggs.
  • Step #5 (Should be very thick.
  • Step #6 ) Heat a griddle to MED-HI & pour on bacon drippings.
  • Step #7 Lightly spray egg rings* & place on griddle.
  • Step #8 Pour batter into rings, cover with foil wrap or heat resistant lid; cook this until set.
  • Step #9 Remove rings & flip over; brown other side.
  • Step #10 Remove to heated plate & keep warm while repeating with remaining batter, spraying rings each time.
  • Step #11 Add more bacon drippings or oil if needed.
  • Step #12 Meanwhile in heavy skillet (used to fry bacon), heat to MED.
  • Step #13 Add butter & melt; add flour & stir constantly to light brown; add chicken stock.
  • Step #14 Whisk to mix.
  • Step #15 Add cream about 1/2 at a time—whisking constantly, until thicken.
  • Step #16 Reduce heat & add seasoning; mix.
  • Step #17 Add mushrooms & chicken (and peas, if using.
  • Step #18 ) Cover up & let simmer over LOW heat for about 15 mins to mix flavors.
  • Step #19 Add white wine to thin if needed.
  • Step #20 To serve, place 1-2 cornmeal rings on each plate & spoon chicken & sauce over rings.
  • Step #21 Sprinkle top with crumbled bacon; top this with a parsley sprig; & serve hot.
  • Step #22 Serves 6-8.
  • Step #23 * If you have no rings, grease muffin tin c with bacon drippings & pour about 1/2” of batter in each c & Bake at 400F.
  • Step #24 ; for about 10-15 mins.
  • Step #25 Watch closely; can burn easily! Let set for at least 5 mins before removing from muffin pan.
