Mussels In Red Chili Broth Recipe

Ingredients
  • 1 tbsp olive oil .
  • 2 medium garlic cloves, peeled, thinly sliced .
  • 1 (2 lb) bag mussels .
  • 1/4 tsp salt (to taste) .
  • 1 tbsp ground dried chipotle powder .
  • 1/4 c dry vermouth .
  • 2 tbsps sliced fresh cilantro (optional) .
  • 2 tbsps finely sliced onions .
  • 1 c canned reduced-sodium fat-free chicken broth

Directions
  • Step #1 In a large pot heat the oil over med-heat/flame.
  • Step #2 Saute garlic & onion 2 mins, stirring frequently so garlic doesn't burn.
  • Step #3 Add the chili powder;cook, stirring, about 30 seconds.
  • Step #4 Add the mussels & all remaining ingredients.
  • Step #5 Cover up & cook this until mussels open, about 5 min (Discard any that don't open).
  • Step #6 Serve in shallow bowls with the broth.
