'ohana Breakfast Bread Recipe

Ingredients
  • 1/2 tbsp salt .
  • 1 c sugar .
  • 1 egg yolk .
  • 1 (1/4 oz) package dry yeast .
  • 2 tbsps butter .
  • 1 c shredded coconut .
  • 1 (20 oz) can crushed pineapple, drained .
  • 1 3/4 c warm water .
  • 2 tbsps cornstarch .
  • 4 1/2 c bread flour .
  • 1/3 c sugar, divided

Directions
  • Step #1 Pineapple/Coconut Procedure.
  • Step #2 mix drained pineapple & coconut in bowl.
  • Step #3 mix 1c sugar & cornstarch in separate bowl & mix well.
  • Step #4 add sugar & cornstarch mixture with pineapple/coconut mixture & mix well.
  • Step #5 put in the fridge for 1 hr.
  • Step #6 Bread Procedure.
  • Step #7 mix water, 1 tbsp sugar (from 1/3 c), & yeast in small bowl.
  • Step #8 Let proof for 5 mins add egg yolk to yeast mixture.
  • Step #9 Put flour in food processor/blender with bread blade.
  • Step #10 Add salt, butter, & remainder of sugar & process until incorporated.
  • Step #11 While processor is running, slowly add yeast mixture through shoot in top of processor.
  • Step #12 Process until a soft ball forms & then run processor for about 2 min longer.
  • Step #13 Transfer dough to bowl coated with cooking spray, cover with plastic wrap sprayed with cooking spray & let rise in warm area until it doubles in size.
  • Step #14 (about 1 hr).
  • Step #15 Roll dough out onto floured surface until it is a 2" thick rectangle.
  • Step #16 Spread the pineapple/coconut mixture over top of dough.
  • Step #17 Fold dough onto itself & cut into pieces with pizza cutter.
  • Step #18 Place pieces into greased 9 x 13 pan to cover.
  • Step #19 Cover up pan with plastic wrap coated with cooking spray & let rise in warm place--about 1/2 way up pan.
  • Step #20 Bake at 325F degrees F for 20-25 mins or until golden brown.
  • Step #21 Let cool, cut & serve.
