Delicate Chocolate Cake Recipe

Ingredients
  • FROSTING (for the layer cake):
  • 4 c confectioners' sugar
  • 1/4 c baking cocoa
  • 1/2 c butter or margarine
  • 1 c water
  • 2 eggs
  • 1 c vegetable oil
  • 1/2 c buttermilk
  • 1/2 c butter or margarine
  • 1/4 c milk
  • 2 c self-rising flour*
  • 1/4 c baking cocoa
  • 2 c sugar
  • 1 tsp vanilla extract

Directions
  • Step #1 In a saucepan, mix oil, water, butter & cocoa.
  • Step #2 Bring to a boil over med-heat/flame; boil for 1 min.
  • Step #3 Remove from the heat.
  • Step #4 In a mixing bowl, mix flour & sugar; slowly add cocoa mixture, beating well.
  • Step #5 Add buttermilk & eggs; mix well.
  • Step #6 Pour into a greased 15-in.
  • Step #7 x 10-in.
  • Step #8 x 1-in.
  • Step #9 baking pan.
  • Step #10 Bake at 350 degrees F for 28-30 mins or until a toothpick inserted near the center comes out clean.
  • Step #11 Cool on a wire rack.
  • Step #12 Cut cake into four 7-1/2-in.
  • Step #13 x 5-in.
  • Step #14 rectangles.
  • Step #15 Wrap two of the rectangles separately in foil; put in the fridge or freeze.
  • Step #16 Set the other two rectangles aside.
  • Step #17 For frosting, mix butter, cocoa & milk in a saucepan.
  • Step #18 Bring to a boil; boil for 1 min (the mixture will appear curdled).
  • Step #19 Pour into a mixing bowl.
  • Step #20 Gradually add sugar & vanilla; beat until frosting is cooled & reaches desired spreading consistency.
  • Step #21 Frost the top of one cake rectangle; top this with the second rectangle.
  • Step #22 Frost the top & sides of cake.
