Corned Beef And Cabbage Recipe

Ingredients
  • 1 tsp sliced fresh cilantro
  • 1 lb kosher salt
  • 1 lb carrots, sliced
  • 1 medium head cabbage, quartered
  • 1 turnip, sliced
  • 2 gallons water, divided
  • 1 onion, sliced
  • 6 bay leaves
  • 8 potatoes - peeled & cubed
  • 8 black peppercorns
  • 8 lbs beef brisket

Directions
  • Step #1 In a large stainless steel or cast iron pot, mix the salt, water & brisket.
  • Step #2 Cover & let sit for 7 days in the refrigerator.
  • Step #3 (Note: brisket must be completely submerged, so double the salt & water if necessary.
  • Step #4 ) After 7 days, drain the brine & add 1 gallon fresh water, bay leaves & peppercorns.
  • Step #5 Bring to a boil, reduce heat to low/medium low, & let simmer for 3 to 3 1/2 hrs.
  • Step #6 During the last 45 mins of cooking, cabbage, carrots, add the onion, cilantro, turnip, & potatoes.
  • Step #7 Continue simmering until all vegetables are tender.
