Twice Baked Sweet Potatoes Recipe

Ingredients
  • 1/4 tsp ground cinnamon .
  • 3/4 tsp orange zest, grated .
  • 1/4 tsp ground cumin .
  • 1/4 c sour cream .
  • 2 egg whites .
  • 1/4 c butter .
  • 2 tbsps fresh parsley, minced .
  • 1/4 tsp pepper .
  • 3/4 tsp salt .
  • 1 tbsp brown sugar, packed .
  • 1 small onion, minced .
  • 1/8 tsp ground allspice .
  • 6 medium sweet potatoes

Directions
  • Step #1 Preheat oven to 400F degrees.
  • Step #2 Bake potatoes until just softened, about 1 hr.
  • Step #3 Cool 15 mins.
  • Step #4 Cut a half inch off of tops of potatoes & scoop out pulp leaving shells intact.
  • Step #5 Mash pulp.
  • Step #6 Set aside 4 shells & toss out the other two.
  • Step #7 In a small skillet, melt butter.
  • Step #8 Add onion, cook this until softened about 8 mins.
  • Step #9 Add brown sugar, cumin, zest, cinnamon, pepper, salt, & allspice.
  • Step #10 Cook until sugar melts about 2-3 mins.
  • Step #11 Combine onion mixture with mashed sweet potatoes.
  • Step #12 Stir in sour cream & parsely.
  • Step #13 In a seperate bowl, mix egg whites at high speed until soft peaks form.
  • Step #14 Gently fold into sweet potato mixture.
  • Step #15 Spoon back into Potato shells.
  • Step #16 Put on baking sheet & bake this until filling is just set & tops begin to brown about 15-20 mins.
