1/3 c asiago cheese or parmigiano or romano cheese, freshly grated .
1/2 c thinly sliced onions .
1/4-1/2 c extra virgin olive oil
Directions
Step #1 Cook tortellini according to package directions to al dente.
Step #2 Drain & allow this to cool, but do not run under water.
Step #3 (Mix in a little olive oil to prevent sticking & drying.

Meanwhile, marinate the sundried tomatoes & garlic in extra virgin olive oil.
Step #5 When tortellini have cooled enough to handle, asiago cheese & the sundried tomato/garlic/olive oil mixture, add the arugula, onion, prosciutto, mixing well & adding salt & freshly ground pepper to taste.
Step #6 Allow to sit, covered & chilled for about an hr so flavors can mix.
