Frosted Pineapple Cookies Recipe

Ingredients
  • 1 1/2 c powdered sugar .
  • 1/4 tsp salt .
  • 1 (8 oz) can crushed pineapple .
  • 2 c flour .
  • 1/2 c butter, softened .
  • 1 large egg .
  • 1 1/2 tsps baking powder .
  • 1 c brown sugar, packed .
  • 1/4 tsp baking soda .
  • 1 tsp vanilla

Directions
  • Step #1 Drain pineapple, reserving 3 tbsp juice.
  • Step #2 Set pineapple aside.
  • Step #3 Set juice aside for frosting.
  • Step #4 In a bowl, cream butter & sugar.
  • Step #5 Add egg, mix well.
  • Step #6 Add pineapple & vanilla, mix well.
  • Step #7 Combine flour, baking powder, baking soda, & salt.
  • Step #8 Stir into creamed mixture.
  • Step #9 Drop by tsp 2" apart on greased cookie sheet.
  • Step #10 Bake at 325° for 17-20 mins.
  • Step #11 Remove & cool on wire racks.
  • Step #12 Frosting -- Combine powdered sugar with just enough reserved juice to get a smooth spread.
  • Step #13 Frost cookies when cool.
