Puffy Cheesy Potatoes Recipe

Ingredients
  • 1 1/2 c shredded sharp cheddar cheese .
  • 1/2-3/4 tsp salt .
  • 2 eggs, beaten until foamy .
  • 3/4 c milk .
  • 1/2 tsp pepper .
  • 8 yukon gold potatoes, peeled & cut into chunks .
  • 1 tbsp butter .
  • 1 small sweet onion, sliced .
  • 1/3 c butter

Directions
  • Step #1 Boil potato chunks in salted water until tender; about 12-15 mins, depending on the size of your chunks.
  • Step #2 Drain.
  • Step #3 Place In a large-ish mixing bowl & mash with a potato masher.
  • Step #4 Sauté onion in 1 tbsps butter until transparent.
  • Step #5 Preheat oven to 375°.
  • Step #6 Combine mashed potatoes with the 1/3 c butter, sautéed onion, milk, salt & pepper.
  • Step #7 Mash to mix together.
  • Step #8 Add cheese & stir.
  • Step #9 Fold eggs into potato mixture with spatula.
  • Step #10 Spray a 2 1/2 quart casserole dish with non-stick spray & pour potato mixture into it.
  • Step #11 Bake at 375° for 45 mins or until puffy & brown.
