Diabetic Pina Colada Fruit Dip Recipe

Ingredients
  • 1/2 c crushed pineapple in juice, drained .
  • 1 (3 1/2 oz) package jello sugar-free instant vanilla pudding mix .
  • 1 c light whipped topping .
  • 2 (8 oz) containers sugar-free coconut cream yogurt (Blue Bunny work best) .
  • 1 tsp rum extract

Directions
  • Step #1 In a medium bowl, mix pudding & yogurt well, making sure there are no pudding lumps.
  • Step #2 Stir in pineapple & rum extract (or rum if you're in a pinch).
  • Step #3 Fold in the whipped topping.
  • Step #4 Cover up & put in the fridge 2 hrs before serving.
  • Step #5 Serve with fruit, angel food cake, cubed lb cake, or vanilla wafers.
