Classic Macaroni Salad - Made Lighter! Recipe

Ingredients
  • 1 dash paprika .
  • 1/8 tsp black pepper .
  • 1 c fat-free mayonnaise (low-fat is good too) .
  • 2 c uncooked elbow macaroni .
  • 1/3 c finely sliced carrots .
  • 1 hard-boiled egg, sliced .
  • 2 tbsps sweet pickle relish .
  • 2 tsps sugar substitute, such as Splenda .
  • 1/2 c finely sliced celery .
  • 1/4 c finely sliced onions .
  • 1/4 tsp salt .
  • 1 tsp ground mustard

Directions
  • Step #1 Cook macaroni according to directions, drain & rinse with cold water & let cool completely.
  • Step #2 Combine mayo, mustard, pickle relish, sugar substitute, salt & pepper to make dressing.
  • Step #3 Mix together pasta, celery, carrots & onion; then carefully mix in dressing; stir this to mix well.
  • Step #4 Garnish with sliced egg & dash of paprika.
