Ingredients
1 dash paprika .
1/8 tsp black pepper .
1 c fat-free mayonnaise (low-fat is good too) .
2 c uncooked elbow macaroni .
1/3 c finely sliced carrots .
1 hard-boiled egg, sliced .
2 tbsps sweet pickle relish .
2 tsps sugar substitute, such as Splenda .
1/2 c finely sliced celery .
1/4 c finely sliced onions .
1/4 tsp salt .
1 tsp ground mustard
Directions
Step #1 Cook macaroni according to directions, drain & rinse with cold water & let cool completely.
Step #2 Combine mayo, mustard, pickle relish, sugar substitute, salt & pepper to make dressing.
Step #3 Mix together pasta, celery, carrots & onion; then carefully mix in dressing; stir this to mix well.
Step #4 Garnish with sliced egg & dash of paprika.
